Cabbage salad recipe

Servings: 6


Ingredients-


Half a head of purple cabbage

1/2 cup shredded carrots*

1 large green bell pepper

Half of a large tomato

1 head of broccoli

10 pepperonis

2 Tbs fresh parsley (chopped)

1/4 cup shredded parmesan cheese

1/4 tsp salt

1/4 tsp pepper

1/4 tsp garlic

Italian salad dressing or vinaigrette (to taste)



Directions-


Start by taking out a large cutting board, sharp knife, and a large serving dish. Now, we can chop the purple cabbage then slide it into the dish. Add the shredded carrots (or if you were using a whole carrot, shred in about half a cup). Next, dice the bell pepper, tomato, and broccoli, then add them to the dish as well. If your cutting board is dirty from the tomato juice, bell pepper seeds, and broccoli, wipe it with a paper towel. Then place the pepperonis in 2 stacks on the cutting board and slice each one down the middle both ways to create 4 mini triangles in each stack. Slide these into the dish. Now, measure 2 Tbs of freshly chopped parsley and add that to the dish as well. Next, add the parmesan cheese, salt, pepper, and garlic. Mix this together using tongs until well combined. Lastly, add your desired amount of dressing into the salad and enjoy!


Notes-


  • I like to use the pre-shredded carrots, however you can always buy whole carrots, then shred them using a grater. I wouldn’t recommend using baby carrots though.
