
Mini Protein Pancakes Recipe 🥞

INGREDIENTS:
1/2 Banana (save the other half for topping) 🍌
1 Tbs Honey 🍯
1/4 cup Peanut Butter 🥜
1 Egg 🥚
1 tsp Vanilla Extract 🥄
2 Tbs Oat Flour 🫙
1 Scoop Vanilla Protein Powder 💪
Chocolate Chips, Blueberries, Sprinkles, Banana (optional) 🫐
INSTRUCTIONS:
Start by mashing the banana, honey, and peanut butter together in a small bowl with a fork. Add in an egg and beat until smooth. Next we'll add in the vanilla extract, oat flour, and protein powder.
Get out a medium sized pan and spray it with cooking oil. Turn on to low heat and let it warm up for about 1 minute. Now pour about 2 Tbs batter for each pancake (I used a 1/4 measuring cup and just filled it half to make it easier). Depending on the size of your pan you should be able to cook a few at a time. Top each one with chocolate chips, blueberries, sprinkles, or any other topping if desired. By now it should be time to flip them, they cook rly fast! About 1 1/2 minutes. Cook the other side for less than 1 minute. Repeat until you've used all the batter. Serve your mini pancakes on a plate or in a bowl and add your choice of toppings. I also like to add milk or oat milk for a fun twist to get mini pancake cereal! 🥣

NOTES:
This recipe is high protein, gluten free, and sugar free. Just make sure to use a gluten free protein powder if needed.
