Peanut Butter Cookie Recipe


Makes about 16 cookies


Ingredients-


For the cookies:

1 stick butter, softened (not melted)

3/4 cup peanut butter

1/2 cup sugar

1/2 cup brown sugar

1 tsp vanilla extract

2 Tbs sour cream

1 egg +

1 egg yolk (save the egg white for later)

1 tsp baking soda

1/4 tsp salt

3/4 cup cornstarch

2 cups flour


For the egg wash:

Extra egg white from earlier

1 Tbs heavy cream (milk will work too)

Sugar


Directions-


For the cookies:

In a large bowl, beat together the butter, peanut butter, and both sugars until fluffy. Add in the vanilla extract and sour cream. Beat for 1 minute. Add in the egg, egg yolk, baking soda, and salt. Mix until just combined. Slowly mix in the cornstarch and flour. Preheat the oven to 350˚F.

Spray a cookie sheet with oil. Roll the dough into balls, placing them in rows on the prepared cookie sheet. Chill the pan in the fridge for about 30 min.

Once the dough is done chilling, immediately place in the preheated oven for 8 min. Make the egg wash by combining the extra egg white and the heavy cream. Then, remove the cookies from the oven, and using a spatula, gently press on the cookies. This should slightly flatten them, giving them a crinkled look. Now brush the egg wash on each cookie. Sprinkle a little sugar on to each one, then place in the oven for 4 more minutes. Once the cookies are done, gently move them to a cooling rack. Let cool for 5 min, then serve and enjoy!
