
No Bake Cheesecake Batter Recipe (video instructions)

(Makes 1 regular size cheesecake)
Ingredients-
2 sticks Cream Cheese
1 cup Sugar
1/2 cup Powder Sugar
1 Tbs Vanilla Extract
Juice from 1/2 a Lemon*
1/4 cup Melted Butter
2 Tbs Heavy Cream
1/4 tsp salt
1 Tbs cornstarch
1/4 tsp baking soda
1 crust*
Toppings of choice (crushed oreos, melted caramel, berries, etc.,)
Directions-
Start by combining the cream cheese, sugar, and powder sugar in a medium sized bowl until smooth. Next mix in the vanilla extract and lemon juice. Then add the melted butter and mix again. Now, let’s pour in 2 Tbs of heavy cream. Lastly, add in the salt, cornstarch, and baking soda, then mix until you get a smooth batter.
Now let's cover the batter with plastic wrap and set in the fridge while preparing your crust. (see notes below)
Follow the directions on the back of the package. If using a raw crust, make sure to bake it according to the directions until it’s fully cooked, as you will not be baking the cheesecake mixture.
Once your crust is fully prepared, pour your batter into the crust then let set in the fridge for at least one hour or overnight.
Also, don’t forget to add toppings like crushed cookies, a caramel drizzle, or berries!
Notes-
If you prefer to use bottled lemon juice, you can use about 1 1/2 Tbs.
Any cheesecake crust will work, wether it’s those frozen ones that you thaw and shape, a pre-packaged one that’s ready to use, or a homemade gram cracker crust.
Feel free to be creative with the flavoring too! I like to match the crust with the toppings, for example if you’d like an oreo cheesecake, use an oreo crust then add crushed oreos on top of your cheesecake for decoration.
