
Banana Pecan Muffins (gluten free & no refined sugar) 🍌

(makes 18 muffins)
Ingredients-
3 ripe bananas
1 large spoon peanut butter
1/2 cup plain Greek yogurt
1/3 cup pure maple syrup or honey
1 Tbs vanilla extract
4 eggs
1 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
1/4 tsp ground cinnamon
1/8 tsp ground nutmeg
2 cups oat flour (or any other gluten free flour)**
1 cup pecan halves (or chopped pecans)
1 cup mini chocolate chips (optional)
a splash of milk (if needed)
Directions-
1. Preheat the oven to 350°F
2. In a medium-sized bowl, mash the bananas with a fork until smooth.
3. Mix in the peanut butter, Greek yogurt, maple syrup (or honey), and vanilla extract until combined.
4. Beat in the eggs, then add the baking powder, baking soda, salt, cinnamon, and nutmeg.
5. Gradually add the oat flour, stirring until the batter is smooth and well mixed.
6. Gently fold in the pecans and mini chocolate chips, if using.
7. If the batter feels too thick, add a small splash of milk to reach a smooth, pourable consistency.
8. Line a muffin tin with liners and lightly spray them with oil.
9. Using a 1/4 cup measuring cup, pour the batter evenly into the liners.
10. Top with extra pecans, chocolate chips, or sliced banana, if desired.
11. Bake for 25–27 minutes, or until the tops are golden and a knife inserted into the center comes out clean.
Let cool for 10-15 minutes, then enjoy!
Notes-
To make oat flour, blend rolled oats in a blender or food processor until fine. Measure after blending.
For softer muffins, use Bob’s Red Mill Gluten-Free Baking Flour instead of oat flour.
To add an extra protein boost, feel free to add a scoop of protein powder! Just remember it may slightly change the flavor of your muffins. I recommend Intek Evolution Vanilla Protein Powder, which I purchase directly from the store.
