Peanut Butter Energy Balls Recipe

Servings: 12

(Makes 12-14 balls)

Ingredients-

2 cups peanut butter*

3 Tbs honey*

1/4 tsp baking soda

1 tsp vanilla extract

1-2 scoops protein powder*

1/4 cup chia seeds

1/2 cup craisins

1/2 cup chocolate chips

1/2 cup granola

1/2 cup oats

Directions-

Mix together the first 6 ingredients (until the chia seeds) in a medium sized bowl. Fold in craisins and chocolate chips with a spatula, then add in granola and oats.

Line a 9” x 9” glass pan with parchment paper. Roll the dough into 12 - 14 balls depending on the size. Freeze for at least 2 hours or overnight. Serve and enjoy!

Notes-

  • I perfer crunchy peanut butter, as it gives a better texture. However, any peanut butter will work.

  • You can substitute the honey with agave or maple syrup.

  • For the protein powder, use the serving size on the back of your jar. Every protein powder is different.
